GAME CHANGER: PINTEREST

Writer's picture: M. Flagg LewisM. Flagg Lewis

In our on going to joinery to eat healthier, exercise more and all in all become a stronger couple with each year of marriage we've come across a few favorite recipes that we find ourselves making at least once a month. I have to thank an old co-worker for turning me on to Pinterest for finding recipes. We've used the site for a number of other things, (home decor ideas, wedding planning, you name it Pinterest has it), so it only makes sense that we snag some cleaner eating recipes as well.

*recipe recommended by Ashleigh of ohhashleigh.com a go too blog about lifestyle, natural hair and more!

For the Slow Cooker Buffalo Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts (about 3)

  • 3/4 cup hot sauce such as Frank's

  • 2 tablespoons coconut oil

  • 1 teaspoon kosher salt

  • 1 teaspoon garlic powder

  • 1/2 teaspoon ground cayenne

  • 4 sweet potatoes

  • 1 tablespoon cornstarch mixed with 1 tablespoon water to create a slurry

  • Chopped green onions for serving

For the Blue Cheese Yogurt Dressing (omit to make dairy free):

  • 1/2 cup nonfat plain Greek yogurt

  • 2 tablespoons milk

  • 1/2 teaspoon white vinegar

  • 1/4 teaspoon black pepper

  • 1/3 cup crumbled blue cheese plus additional for serving

*I use low fat ranch dressing and reduced fat feta cheese crumbles since I don't care for blue cheese

For the sweet potatoes, I halved them put a light coat them of olive oil and baked them off at 350 for 30 minutes or until golden brown and soft on the inside
